3 lemons - juice and grated peel
2 eggs
300 cc cream - I use whipping
1small tin condensed milk
1 tbsp caster sugar
Beat egg white stiff with sugar. (add sugar little at a time)
Beat egg yolks, cream and condensed milk until smooth. Mix the lemon juice
and zest in cream mixture. It will thicken a lot.
Fold in whisked egg white. Pour in loaf tin and freeze. Turn out a day
later. Cover with crushed amaretti biscuits
Ginger biscuits will do as well. And refreeze until you need it.
Take it out of the freezer about 5 to 10 minutes before serving.
Cut into thick slices and place a slice on top of a layer of thinly sliced
Kiwi fruit. Summer berries will also do very nicely.
