Laine's recipes


This is what we had last Christmas but I was so hungry that I never took a photo of the finished article. If anyone tries this one, please take a photo and email it to me to post.

Kulebiac

What you need:

1 slab of short crust pastry
2 onions
10 mushrooms
1 salmon steak
6 oz smoked Haddock or cod.
3 cups of cooked rice , cooked with fish stock
2 boiled eggs sliced
1 tablespoon chopped parsley…salt and pepper
1 beaten egg for glazing.


 




Fry chopped onions with a bit of butter until soft add sliced mushroom
Fry for a few more minutes…..let cool
Cut the deboned fish into small cubes and mix them with the onions and mushroom

Cut the slab of pastry in halves and roll them out as large as possible
Lay one piece on a floured aluminum foil ,previously placed on a oven sheet
Paint the pastry with a bit of beaten egg.

Put a layer of cooled cooked rice on the pastry
A layer of onion, mushroom ,and fish then….another layer of rice
Then a layer of sliced eggs, then rice again until finished
Sprinkle with chopped parsley
I add about 10 little cubes of butter all over
Cover with the other piece of pastry.
Glaze with the rest of the beaten egg and decorate well

Bake in preheated oven 180C for about 1 hour, until pastry is cooked

Make a lot of parsley sauce to go with the Kulebiac

Serve with a nice salad
