Baked Fish


4 pieces salmon steaks…boned and skinned
2 wings of skates, cut into 4 pieces. If using other white fish, must be boned and skinned
15 to 20 cooked large prawns about 2 inches long
2 onions shredded finely
2 sprigs of rosemary
6 stems of thyme
10 sage leaves
1 head of garlic separated into cloves. Keep the husks on them
Salt and pepper
½cup olive oil
2 teaspoonful of French mustard

Fry the shredded onion in a little oil until slightly brown and soft…leave it aside.
Put the cloves of garlic in a dish with little water, cover with cling film and cook in the microwave for 2 minutes on high until soft. Leave aside

PREHEAT OVEN TO 225C.

20 minutes before the meal
In a large ovenproof dish. Put in the cooked onion. All the herbs and fish pieces. Also the soften cloves of garlic
Mix oil with French mustard, salt and pepper and pour over the fish mixture.
Bake for 20 minutes. Until cooked.
Once out of the oven, add the cooked prawns. Use a large spoon and scoop some sauce over the prawns.
Serve with boiled rice or boiled potatoes
